Roasted Pork Tenderloin
Roasted vegetables and sliced tomato

Ingredients

Prep
  • 1 1/2 lbs pork tenderloin
  • 6 baby new potatoes
  • 1 bag baby carrots
  • 1 1/2 C frozen chopped onion
  • 2 T olive oil
  • 2 t dried rosemary
  • 1 t dried sage
  • 1/4 t pepper
On Cooking Day
  • 3 tomato

Instructions

To Assemble
  1. Place tenderloin in 9 x 13 baking dish sprayed with non stick spray.
  2. Add potatoes, carrots and chopped onion around pork.
  3. Drizzle with olive oil.
  4. Sprinkle with herbs and toss gently to coat.
  5. Cover with foil.
To Cook
  1. Bake covered in 450 degree oven for 40 – 45 minutes or until vegetables are tender and meat is 165 degrees.
  2. Serve with chilled sliced tomato.
