Roasted Corn and Fish Tacos – 5

Ingredients

  • 2 T olive oil
  • 6 cod filets or any fish you like
  • 2 T taco seasoning
  • 12 oz frozen fire roasted corn
  • 12 corn tortillas
  • 1 bag shredded coleslaw mix or shredded lettuce

Instructions

  1. Preheat oven to 400 degrees.
  2. Brush fish with olive oil then sprinkle evenly with taco seasoning and place on large baking sheet sprayed with non stick spray.
  3. Pour corn around fish on baking sheet.
  4. Bake for 10-12 minutes or until fish flakes easily with fork.
  5. Serve fish, corn and Cole slaw on tortillas.
