Ranch Chicken and Potatoes – CE

Ingredients

Prep
  • 1 lb baby new potatoes
  • 6 boneless chicken breasts small/medium
  • 1 T minced garlic
  • 2 T dry ranch seasoning or homemade
  • 2 T olive oil
  • 1 T dried parsley flakes
On Cooking Day
  • 6 C salad greens
  • 3 C frozen green beans

Instructions

To Assemble
  1. Chop potatoes into bite size pieces (1 inch) and add to large zipper bag.
  2. Chop chicken into 2 inch pieces and add to potatoes in zipper bag.
  3. Add remaining ingredients to bag. Zip to seal and squish to mix.
To Cook
  1. Pour chicken and potatoes onto baking pan sprayed with non stick spray.
  2. Bake 25 – 35 minutes at 400 degrees or until chicken is cooked through and potatoes are tender
  3. Cook green beans according to package directions.
