Ingredients

Prep
  • 2 lb Pork Roast
  • salt and pepper to taste
  • 1/2 T chili powder
  • 2 t smoked paprika
  • 2 t garlic powder
  • 1/2 t cayenne pepper
  • 1 onion
On Cooking Day
  • 1/2 C water
  • 1/4 C apple cider vinegar
  • 1 butter lettuce
  • Queso fresco
  • hot sauce optional
  • 6 oz guacamole
  • 1 pkg pork rinds

Instructions

To Assemble
  1. Add pork roast to large zipper bag and add salt and pepper.
  2. In a small bowl, combine next four ingredients. Add to roast. Zip to seal and squish around to mix.
  3. Slice onion and add to a separate small zipper bag or bowl with lid.
To Cook
  1. Add water and onions, pork, and apple cider vinegar to Instant Pot.
  2. Pressure cook on high pressure for 60 minutes. Allow to natural release when done. Shred the pork and stir to mix in juices.
  3. Build lettuce wraps with pork, queso fresco and a drizzle of hot sauce. Serve with guacamole and pork rinds.
