Pork Tenderloin Sweet Potato Sheet Pan – CE

Ingredients

Prep
  • 2 lb pork tenderloin 1 pound each
  • 1/3 C balsamic vinegar
  • 2 T minced garlic
  • 1/3 C olive oil
  • 4 t dried oregano
  • salt and pepper to taste
  • 6 sweet potatoes
  • 1 T dried parsley flakes
  • 1/4 C olive oil
  • salt and pepper to taste
On Cooking Day
  • 10 C salad greens

Instructions

To Assemble
  1. Place pork and next 5 ingredients in a large zipper bag. Zip to seal.
  2. Cut potatoes into wedges and place in another large zipper bag with next 3 ingredients.
To Cook
  1. Place pork and sweet potatoes on large baking sheet sprayed with non stick spray.
  2. Bake in a 400 degree oven for 30-35 minutes or until pork is cooked through.
  3. Serve with green salad.
