Pork Egg Roll in a Bowl – W30

Ingredients

Prep
  • 3 T coconut aminos
  • 1 t sesame oil
  • 1/2 t minced ginger
  • 2 t minced garlic
  • 1 green onion
  • 1 onion small
  • 1 lb ground pork
  • 1/2 t salt
  • 1/4 t Chinese Five Spice Powder
  • 1 pinch red pepper flakes optional
On Cooking Day
  • 1 T olive oil
  • 12 oz coleslaw mix or Asian slaw mix
  • 16 oz frozen cauliflower rice

Instructions

To Assemble
  1. In a small bowl or mason jar with a lid, mix together coconut aminos, sesame oil, ginger and garlic. Mix and set aside.
  2. Chop green onion and place in a small container with a lid or seal in a small zipper bag.
  3. Chop onion and add to a large zipper bag with ground pork. Season with salt, Chinese Five Spice Powder and pepper. Zip to shake and mix well.
To Cook
  1. Heat a large skillet with oil over medium heat. Add onion and pork mixture and cook, stirring occasionally until cooked thoroughly, about 7-8 minutes. Drain excess liquid if needed.
  2. Stir in coleslaw mix and prepared sauce and cook, stirring occasionally until cabbage is cooked to desired consistency, about 4-5 minutes for crunchy. No longer than 6-7 minutes. Stir in reserved chopped green onion and season with a pinch of salt.
  3. Cook cauliflower rice per package directions.
