Poppy Seed Chicken Casserole – C
broccoli and rice

Ingredients

Prep
  • 1 C sour cream
  • 15 oz cream of chicken soup
  • 1/2 C shredded Parmesan cheese
  • 2 t poppy seeds
  • 1 t minced garlic
  • 1/2 t Worcestershire sauce
  • 1 deli rotisserie chicken shredded
  • 1/2 C frozen chopped onions
  • 2 C crushed ritz crackers
  • 1/2 C butter
On Cooking Day
  • 2 bag frozen rice steamers
  • 16 oz frozen broccoli

Instructions

To Assemble
  1. Add first 6 ingredients together in a large bowl. Add shredded chicken and onion and mix together until combined.
  2. Pour chicken mixture into a 9 x 13 baking dish sprayed with non-stick spray.
  3. Melt butter in a medium bowl and cool slightly. Mix crushed crackers with melted butter until combined. Sprinkle over top of casserole. Cover with foil.
To Cook
  1. Bake uncovered at 350 degrees for 20-30 minutes.
  2. Cook broccoli and rice according to package directions.

If you want a crunchier topping melt butter and toss with crushed ritz crackers and sprinkle on casserole right before baking.
