Pistachio Crusted Cod – CE
brown rice and green beans

Ingredients

Prep
  • 6 cod fillets or any white fish
  • 2 T Dijon mustard
  • 1/2 t garlic powder
  • salt and pepper to taste
  • 1/2 C pistachios shelled and chopped
On Cooking Day
  • 20 oz green beans
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Place fish fillets in a baking dish sprayed with non stick spray
  2. Mix mustard, garlic powder, salt and pepper and spread over fish.
  3. Sprinkle and pat down pistachios. Cover with plastic wrap.
To Cook
  1. Uncover and bake fish 400 degrees for 15-18 minutes or until fish flakes easily with fork.
  2. Steam rice and green beans. Season as desired.
