Pesto Chicken Stuffed Mushrooms – CE

Ingredients

Prep
  • 6 portobello mushrooms
  • 3 C cooked shredded chicken rotisserie
  • 1/3 C pesto sauce
  • 3 C shredded mozzarella cheese
On Cooking Day
  • 10 C salad greens

Instructions

To Assemble
  1. Remove any stems from mushrooms and place in a 9×13 baking dish spayed with non stick spray.
  2. Mix next 3 ingredients and fill each mushroom cap equally. Cover with foil.
To Cook
  1. Bake uncovered in a 400 degree oven for 10-15 minutes or until centers are warm and cheese is melted.
  2. Serve with salad and dinner rolls.
