Pesto Chicken and Spinach
rice, green salad and dinner rolls

Ingredients

ingredients needed to assemble
  • 4 boneless chicken breasts
  • 3/4 C pesto sauce
  • 3 tomatoes
  • 2 C fresh spinach
  • 2 C shredded mozzarella cheese
ingredients needed to cook
  • 2 bags brown rice steamers
  • 6 C salad greens

Instructions

  1. Add a spoon full of pesto to bottom of 9×13 baking dish and spread around to coat bottom of dish.
  2. Add chicken breasts to baking dish and top with remaining pesto sauce.
  3. Top with spinach.
  4. Slice tomatoes and place on top chicken/spinach.
  5. Sprinkle cheese all over and cover with foil.
  6. loosen foil and bake 375 degrees for 30-45 minutes depending on thickness of chicken. Chicken is cooked when juices run clear.
  7. Serve with rice and salad.
