Pesto Chicken Sliders – C
Potato chips and salad

Ingredients

Prep
  • 16 dinner rolls or 12 slider rolls cut in half
  • 3 C cooked shredded chicken deli rotisserie
  • 2 C shredded mozarella cheese
  • 1/2 C sun dried tomatoes chopped
  • 1/4 C pesto sauce
  • 3 T butter
  • 1/2 t garlic powder
On Cooking Day
  • 1 bag potato chips
  • 8 C salad greens

Instructions

To Assemble
  1. Line a 9 x 13 baking dish with bottom halves of dinner rolls. (They should fill the dish and fit snug.)
  2. Top each with chicken, tomatoes and cheese.
  3. Spread pesto on underside of tops of rolls then place top of sandwich. Cover with plastic wrap.
  4. Add next 2 ingredients to a small microwave safe bowl with lid.
To Cook
  1. Uncover sandwiches. Warm butter in microwave until melted. Mix well and brush over sandwiches with pastry brush.
  2. Bake covered with foil in 400 degree oven for 10 minutes. Uncover and bake additional 5 – 10 minutes or until tops are golden brown.
  3. Serve with chips and salad.
