Pesto Baked Cod – CE
broccoli, cauliflower and rice

Ingredients

Prep
  • 6 cod filets or any white fish
  • 12 oz broccoli florets
  • 12 oz cauliflower florets
  • 1/4 C grated Parmesan cheese
  • 1/2 C pesto sauce
On Cooking Day
  • 2 bag steamers brown rice

Instructions

To Assemble
  1. Add cod filets to a large baking dish sprayed with non stick spray.
  2. Add broccoli and cauliflower to a large zipper bag or bowl.
  3. Spoon half of the pesto and parmesan cheese over the fish filets and remaining over vegetables. Toss vegetables or shake in bag and pour around fish filets. Cover with plastic wrap.
To Cook
  1. Uncover and bake in a 375 degree oven for 20-25 minutes or until fish flakes easily with a fork.
  2. Cook rice according to package directions.
