Pecan Crusted Sweet Potatoes

Ingredients

Prep
  • 4 sweet potatoes
  • 2 T olive oil
  • 1/2 C chopped pecans
  • 1/4 C brown sugar
  • 1/4 t cinnamon
  • 3 T flour
  • 3 T butter
On Cooking Day
  • none

Instructions

To Assemble
  1. Slice sweet potatoes into 1/4 inch circles and add to large zipper bag with olive oil.
  2. Add remaining ingredients to a small bowl with lid.
To Cook
  1. Place sweet potato rounds on large baking sheet sprayed with non stick spray.
  2. Bake in a 400 degree oven for 20 minutes. Top with pecan mixture and bake until potatoes are tender and topping is caramelized.
