Orange Ginger Salmon – C
rice and asparagus

  • freezable once assembled, one pan, seafood, skinny

Ingredients

Prep
  • 1/4 C orange marmalade
  • 2 T soy sauce
  • 2 T honey
  • 1 t ginger
  • 2 t minced garlic
  • salt and pepper to taste
  • 6 salmon fillets
  • 1 bunch asparagus
On Cooking Day
  • 2 bag frozen rice steamers

Instructions

To Assemble
  1. Combine first 6 ingredients in a small bowl.
  2. Add salmon to 9×13 baking dish sprayed with nonstick spray.
  3. Trim woody ends off of asparagus and discard. Add asparagus spears to pan with salmon. Pour/brush sauce over top of salmon filets and asparagus and cover with foil.
To Cook
  1. Uncover and bake in a 400 degree oven for 15-20 minutes or until desired doneness.
  2. Cook rice according to package directions.

*Non seafood eaters, substitute with chicken breasts or steak.  May require longer cook time.
