Orange Chili Salmon – CE
Broccoli and brown rice

Ingredients

Prep
  • 1 orange
  • 6 salmon fillets
  • 1/2 C butter
  • 3 T honey
  • 3 T orange juice
  • 2 t chili seasoning packet
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen broccoli

Instructions

To Assemble
  1. Slice orange into thin rounds and place in the bottom of a baking dish. Place salmon on top. Cover.
  2. Add next 4 ingredients to a small bowl with lid.
To Cook
  1. Warm sauce in microwave until butter is melted.
  2. Broil salmon for 5 minutes. Brush on sauce and broil another 3 – 4 minutes or until desired doneness.
  3. Cook broccoli and brown rice according to package directions.
