One Pan Parmesan Chicken, Carrots, and Potatoes – CE

Ingredients

Prep
  • 3 lb chicken drumsticks
  • 1 1/2 lbs baby red potatoes
  • 8 oz baby carrots
  • 1/4 C butter
  • 2 T olive oil
  • 1 C shredded Parmesan
  • 1 T oregano
  • 1/2 t paprika
  • 1/2 T garlic powder
  • salt and pepper to taste
On Cooking Day
  • 1 bag frozen green beans

Instructions

To Assemble
  1. Add chicken to a large zipper bag. Dice potatoes and add to another large zipper bag with carrots.
  2. Melt butter in small bowl then add remaining ingredients to the butter. Pour half of butter mixture over chicken and half over vegetables.
To Cook
  1. Line a rimmed baking sheet with foil and spray it with cooking spray. Place chicken and veggies on baking sheet and cook at 400 for 45-55 minutes or until chicken is cooked through.
  2. Cook green beans according to package directions.
