One Pan Old Bay Shrimp and Sausage Dinner – CE

Ingredients

Prep
  • 1 package Andouille sausage or any cooked sausage
  • 1 bunch asparagus
  • 2 yellow onion small
  • 1 lb shrimp
  • 2 t Old Bay Seasoning
  • 2 T olive oil
  • salt and pepper to taste
  • 1 lemon
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Slice sausage and trim woody ends from asparagus. Cut onions into wedges. Place sausage, asparagus, and onions in large zipper bag with 1 t of old bay and 1 T of olive oil. Zip to seal and squish to mix.
  2. Place shrimp in another large zipper bag with remaining old bay and olive oil. Zip to seal and shake to mix.
  3. Cut lemon into slices and store in a small container with a lid.
To Cook
  1. Spray a large baking sheet with cooking spray. Add sausage mixture and bake at 400 degrees for 15 minutes.
  2. Remove from oven, add shrimp and arrange lemons on top of dish. Cook another 7-9 minutes or until shrimp are cooked through and pink.
  3. Serve with green salad and lemon wedges.

If desired add a few dabs of butter on top of shrimp mixture before cooking in oven.
