One Pan Mexican Shrimp – CE

Ingredients

Prep
  • 1/2 C frozen chopped onions
  • 1 C frozen chopped bell pepper
  • 1 1/2 lb large raw peeled shrimp
  • 1 C cherry tomatoes
  • 15 oz canned black beans
  • 1/2 T minced garlic
  • 1 1/2 C frozen corn
  • 2 T taco seasoning
  • salt and pepper to taste
On Cooking Day
  • 2 t olive oil
  • 1/2 T lime juice
  • 1/4 C fresh chopped cilantro
  • 2 avocados

Instructions

To Assemble
  1. Add first 3 ingredients to large zipper bag.
  2. Half cherry tomatoes. Rinse and drain black beans.
  3. Add tomatoes, black beans, and remaining ingredients to separate large zipper bag. Zip to seal and gently toss around to mix.
To Cook
  1. Add olive oil to skillet on medium heat. Add shrimp mixture to skillet and cook for 4-5 minutes (until shrimp begin to curl).
  2. Add remaining prepped ingredients to hot skillet, along with lime juice and cilantro. Cook for another 5 minutes, or until ingredients are heated through.
  3. Slice avocado and serve on top of shrimp mixture.
