One Pan Buffalo Salmon and Broccoli

Ingredients

Needed for Assembly
  • 6 T butter
  • 5 T hot sauce Franks Red Hot
  • 1/2 C panko bread crumbs
  • 6 salmon filets
  • 1 1/2 lb broccoli florets
  • 1 lemon
Needed on Cooking Day
  • 2 bag frozen rice steamers

Instructions

Assembly
  1. Melt butter in the microwave in a small bowl.
  2. Add hot sauce, mix well and brush over each salmon filet.
  3. Sprinkle with Panko bread crumbs and store in a container with a lid. Use wax paper between layers.
  4. Add broccoli, lemon juice from 1/2 lemon and some lemon zest (about 1/2-1 tsp) to large zipper bag.
  5. Zip and shake to mix.
Cooking
  1. Place salmon and broccoli on large baking sheet sprayed with non stick spray.
  2. Bake in a 425-degree oven for 10-15 minutes or until fish flakes easily in the center.
  3. Cook rice according to package directions.

*tip- larger broccoli florets work better.  If small, wait and add them to the pan 1/2 way though cooking time.
