Mini Pepper Nachos – CE

Ingredients

Prep
  • 1/2 lb cooked ground beef
  • 6 T salsa more for serving if desired
  • salt and pepper to taste
  • 30 oz canned black beans
  • 2 t ground cumin
  • 1 t minced garlic
  • 26 mini bell peppers
  • 2 Roma tomatoes
  • 4 green onions
On Cooking Day
  • cooking spray
  • 1 C shredded Mexican cheese
  • 1 avocado
  • 2 T fresh chopped cilantro
  • sour cream optional
  • 1 can black beans

Instructions

To Assemble
  1. Drain and rinse beans. Add first 6 ingredients to large zipper bag.
  2. Cut mini bell peppers in half. Remove stems and seeds. Store in a zipper bag, or large container with a lid.
  3. Dice Roma tomatoes and green onions. Store in separate containers.
To Cook
  1. Preheat oven to 400 degrees.
  2. Spray a sheet pan with cooking spray. Place peppers cut-side up on sheet pan.
  3. Fill peppers with beef mixture and sprinkle with cheese. Bake until cheese is melted, about 5-7 minutes.
  4. Dice avocado. Garnish with avocado, tomato, onion, cilantro, and sour cream as desired.
  5. Heat up black beans and serve.
