Mediterranean Turkey Burgers – LC
Green salad and green beans

Ingredients

Prep
  • 1 t minced garlic
  • 3 roasted red peppers from jar
  • 1/3 C sundried tomatoes
  • 2 T black olives chopped
  • 1 t oregano
  • salt and pepper to taste
  • 1 ball soft mozzarella cheese
On Cooking Day
  • 6 C salad greens
  • 16 oz frozen green beans
  • 6 formed hamburger patties turkey
  • 1 iceberg lettuce if desired

Instructions

To Assemble
  1. Chop first 3 ingredients and place in small container with lid.
  2. Add next 3 ingredients, mix well and cover.
  3. Slice cheese into 6 slices and store in small zipper bag.
To Cook
  1. Grill 6 formed turkey patties on indoor or outdoor grill. (George Foreman is fastest).
  2. Top each with tomato mixture and slice of cheese while still on grill so cheese can melt.
  3. Serve on lettuce leaf “buns” if desired.
  4. Cook green beans according to package directions.
  5. Serve with green salad.
