Maui Shrimp Un-Kabobs – CE
baked sweet potatoes

Ingredients

Prep
  • 1 bell pepper any color
  • 1 zucchini
  • 1 1/2 lb large shrimp peeled and deveined, tail on ok
  • 8 oz pineapple chunks canned or frozen
  • 1/4 C coconut milk canned, full fat
  • 2 T soy sauce
  • 1 T minced garlic
  • salt and pepper to taste
  • 6 med sweet potatoes
On Cooking Day
  • none needed

Instructions

To Assemble
  1. Cut pepper and zucchini into (1 inch) bite-sized pieces and add to a large zipper bag along with next 6 ingredients.
  2. Wrap sweet potatoes individually in foil.
To Cook
  1. Place sweet potatoes in slow cooker in the morning and cook on low 6-8 hours.
  2. Drain liquid from bag if needed and pour contents onto a large baking sheet sprayed with non stick spray. Broil for 5-7 minutes or until shrimp is cooked through.
  3. Serve shrimp and veggies over sweet potatoes.
