Maple Mustard Chicken Legs – CE

Ingredients

Prep
  • 4 chicken legs with thighs
  • 1 lb baby potatoes
  • 8 oz baby carrots
  • 2 T olive oil
  • 2 T Dijon mustard
  • 2 T whole grain mustard
  • 2 T pure maple syrup
  • 1/4 t ground red pepper
  • salt and pepper to taste
On Cooking Day
  • 1 pkg frozen green beans
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Cut potatoes and carrots in half and place in a large zipper bag. Add all remaining ingredients. Zip to seal and squish to mix.
To Cook
  1. Place mixture in a baking dish (sprayed with non stick spray). Make sure veggies are under the chicken and chicken is skin side up.
  2. Bake 425 degrees for about 45 minutes or until chicken is cooked through. Broil on high for about 3 minutes to brown chicken if desired.
  3. Prepare green beans according to package directions. Serve green beans and rolls with chicken.
