Loaded Buffalo Chicken Nachos – C

Ingredients

Prep
  • 3 green onion
  • 1 celery rib
  • 4 C cooked shredded chicken from deli rotisserie
  • 1/2 C Frank’s red hot sauce buffalo wing sauce
  • 1/2 C ranch dressing
On Cooking Day
  • 18 oz tortilla chips
  • 2 C shredded cheddar cheese
  • 1/4 C ranch dressing optional
  • 1/2 C blue cheese crumbles optional
  • 6 C salad greens

Instructions

To Assemble
  1. Chop green onion. Reserve 1/4 cup in a small bowl with a lid. Chop celery and add to to bowl with reserved green onion. This will be used for serving day.
  2. Add the remaining chopped onion to medium bowl with lid along with remaining ingredients. Mix well.
To Cook
  1. Line large baking sheet with foil and spray with non stick spray.
  2. Pour chips onto baking sheet and top evenly with chicken mixture and shredded cheese.
  3. Bake in a 350 degree oven for 15-20 minutes or until heated through and cheese is melted.
  4. Top nachos with reserved chopped green onion and celery, crumbled bleu cheese and drizzle with ranch dressing. Serve with green salad.
