Lime Cilantro Steak – C
Green salad, sweet potatoes and corn on the cob

Ingredients

Prep
  • 2 t minced garlic
  • 1 T lime juice
  • 1 t dried thyme
  • 1/4 C cilantro
  • 2 T olive oil
  • 1 T honey
  • salt and pepper to taste
  • 2 1/2 lbs sirloin steak
  • 6 sweet potatoes
  • 6 frozen mini corn cobs
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Chop enough cilantro for ¼ cup.
  2. Mix first 7 ingredients in large zipper bag.
  3. Add steak. Zip to seal and squish around to mix.
  4. Wash potatoes and wrap in foil. Store in refrigerator. Wrap each corn cob in foil. (store in freezer) (These will cook in the foil in the slow cooker the day you cook the steak.)
To Cook
  1. Place potatoes and corn cobs in slow cooker and cook on low for 6-8 hours.
  2. Grill steak on indoor or outdoor grill until desired doneness. (May also be broiled in the oven for 5 minutes on each side or until desired doneness.)
  3. Serve with green salad.
