Lemon Basil Shrimp – C
orzo and broccoli

Ingredients

Prep
  • 2 lb large raw peeled shrimp
  • 1/4 C olive oil
  • 1 T minced garlic
  • 2 T lemon juice
On Cooking Day
  • 1/4 C chopped fresh basil
  • 2 C orzo pasta
  • 4 C chicken broth
  • 1/2 C fine grated parmesan cheese
  • 16 oz frozen broccoli

Instructions

To Assemble
  1. Add all ingredients to large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Cook shrimp in skillet on medium heat for 4-5 minutes (or until shrimp turns pink and begins to curl).
  2. Garnish shrimp with chopped basil.
  3. Cook orzo with chicken broth. Add parmesan cheese when finished cooking (drain first if there is too much liquid).
  4. Cook broccoli according to package directions.
