Jalapeno Popper Quesadillas – C
salad and refried beans

  • kid favorite, meatless, one pan

Ingredients

Prep
  • 1/4 C jarred jalapeño slices
  • 8 oz whipped cream cheese
  • 1 C real bacon bits
  • 4 C shredded cheddar cheese
On Cooking Day
  • 12 flour tortillas taco size
  • 10 C salad greens
  • 14 oz refried beans

Instructions

To Assemble
  1. Dice jalapeño and add to medium bowl with lid.
  2. Add remaining ingredients and mix well.
To Cook
  1. Lay bottom tortilla on large baking sheet sprayed with non stick spray, top with cheese mixture and another tortilla. Spray with cooking spray or brush with melted butter.
  2. Bake in a 400 degree oven for 15-20 minutes.
  3. Serve with salad.
