Italian Chopped Salad – CE

Ingredients

Prep
  • 1 pint cherry tomatoes
  • 15 oz canned chickpeas
  • 7 oz artichoke hearts
  • 2.25 oz sliced black olives
  • 4 oz sliced deli salami
On Cooking Day
  • 4 C salad greens
  • 3 slices provolone cheese
  • 1/3 C vinaigrette dressing Italian vinaigrette

Instructions

To Assemble
  1. Slice cherry tomatoes and chop artichoke hearts.
  2. Add all ingredients to large bowl with lid.
To Cook
  1. Tear cheese slices into bite-sized pieces and add to salad.
  2. Add salad greens and cheese to chopped salad. Mix well.
  3. Drizzle with vinaigrette dressing.
