Hot Ham Cornbread Sandwich – Anniversary

Ingredients

Prep
  • 2 pkg cornbread mix Jiffy or similar brand
  • 2 eggs
  • 2/3 C milk
  • cooking spray
  • 3/4 lb deli sliced ham
  • 6 slices cheddar cheese
On Cooking Day
  • 6 C green salad

Instructions

To Assemble
  1. Add the first 3 ingredients to a medium bowl and mix to combine. Spray a 7×11 inch pan with cooking spray and spread half of the mixture on the bottom of the pan.
  2. Layer the ham and cheddar on top of the cornbread batter. Spread the remaining batter on top, and cover the dish with plastic wrap or foil.
To Cook
  1. Bake, uncovered, in a 400 degree oven for 20 minutes, or until cornbread is golden brown. Serve with salad.
