Ingredients

Prep
  • 1 can black beans
  • 1 bag cole slaw cabbage
  • 1 C frozen chopped bell pepper
  • 1 C frozen corn
  • 1/4 C cilantro chopped
  • 3/4 C mayonnaise
  • 1/4 C sour cream
  • 2 T taco seasoning
  • 2 T lime juice
  • 6 boneless chicken breasts
  • 1 T taco seasoning
  • 2 T lime juice
  • 2 T olive oil
On Cooking Day
  • 1 pkg corn tortillas

Instructions

To Assemble
  1. Rinse and drain black beans and add to large zipper bag along with next 8 ingredients. Zip and shake really well to mix.
  2. Add chicken breasts and next 3 ingredients to another large zipper bag. Zip and shake to mix.
To Cook
  1. Grill chicken on indoor or outdoor grill or brown in skillet on stove top.
  2. Serve with cole slaw and tortillas.
