Greek Quesadillas – CE

Ingredients

Prep
  • 2 tomato
  • 1 cucumber
  • 1/2 C Kalamata olives
  • 1 C crumbled feta cheese
  • 2 C shredded mozzarella cheese
  • 1 C plain Greek yogurt
  • 1 T lemon juice
  • 1 t minced garlic
  • 1 t dried dill
  • salt and pepper to taste
On Cooking Day
  • 12 flour tortillas taco size
  • 6 C salad greens
  • 16 oz grapes

Instructions

To Assemble
  1. Chop tomato and add to a large container with a lid. Peel and chop cucumber and halve olives and add to container. Add feta and shredded cheese to container and gently mix to combine. Season with salt and pepper.
  2. In a small bowl with a lid mix together Greek yogurt, lemon juice, garlic and dill. Season with a pinch of salt and pepper. This will be your dipping sauce.
To Cook
  1. Lay half the tortillas on a large baking sheet (you may need 2 baking sheets to fit them), sprayed with non stick spray.
  2. Spread cheese mixture evenly onto each tortilla and top each with another tortilla.
  3. Spray tops with non stick spray or brush with melted butter.
  4. Bake in a 400 degree oven for 12 – 18 minutes or until golden brown.
  5. Serve with dipping sauce and green salad and grapes.
