Garlicky Chicken and Brussel Sprouts – OP1

Ingredients

Prep
  • 6 chicken cutlets
  • 2 T dried parsley flakes
  • 1/2 t dried red pepper flakes optional
  • 3 T minced garlic
  • 2 T olive oil
  • salt and pepper to taste
  • 2 lbs brussel sprouts
  • 3 T balsamic vinegar
  • 2 T olive oil
  • 2 T honey
On Cooking Day
  • 1 bag steamers mashed potatoes

Instructions

To Assemble
  1. Add chicken to large zipper bag with next 5 ingredients. Zip and squish to mix well.
  2. Chop brussel sprouts in half (trim stems if desired) and add to another large zipper bag along with next 3 ingredients. Zip and squish to mix.
To Cook
  1. Place chicken on large baking sheet sprayed with non stick spray. Pour brussel sprouts around chicken and roast in a 400 degree oven for 20-25 minutes. (cook time will vary depending on thickness of chicken)
  2. Cook mashed potatoes according to package directions.
