Garlic Pesto Shrimp Pasta – CE

Ingredients

Prep
  • 1 1/2 lb large shrimp peeled and deveined
  • 1 C frozen onion
  • 3 t minced garlic
  • 3/4 C pesto sauce
  • 3/4 C chicken broth
On Cooking Day
  • 1 lb whole wheat spaghetti or zucchini noodles
  • 1/4 C fresh grated Parmesan cheese
  • 8 C salad greens

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip to seal. Shake to mix.
To Cook
  1. Place shrimp mixture into skillet and cook until shrimp turn pink.
  2. Boil pasta according to package directions. Mix shrimp mixture with pasta.
  3. Serve with green salad.
