Dijon Pesto Pork Chops – C
potatoes, green beans and salad

Ingredients

Prep
  • 4 T Dijon mustard
  • 4 T pesto sauce
  • 2 T olive oil
  • salt and pepper to taste
  • 6 pork chops loin cut if possible
  • 1 lb baby gold potatoes
  • 16 oz green beans
  • 2 T olive oil
  • salt and pepper to taste
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Add first 5 ingredients to large zipper bag. Zip and shake to mix.
  2. Chop potatoes into bite size pieces and add with last 3 ingredients to another large zipper bag. Zip and shake to mix.
To Cook
  1. Remove chops from bag and place on baking sheet. Pour vegetables around pork chops and bake at 400 degrees for 30-35 minutes.
  2. Serve with salad.
