Creamy Tuscan Chicken – C

Ingredients

Prep
  • 6 boneless chicken breast
  • 2 T butter
  • 2 T minced garlic
  • 1 t onion powder
  • 1/2 C chicken broth
  • 1/2 C sun dried tomatoes sliced
  • 1 1/2 C can coconut milk full fat
  • 1/2 C shredded Parmesan cheese
  • 1 T cornstarch
  • salt and pepper to taste
  • 2 t Italian seasoning
On Cooking Day
  • 3 C spinach
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Cut chicken into bite size pieces and place in a large zipper bag. Add next 3 ingredients and zip to seal and squish to mix.
  2. Mix next 7 ingredients in a medium bowl with lid.
To Cook
  1. Pour chicken mixture into large skillet and cook about 6-7 minutes or until chicken is cooked through. Remove from pan and set aside.
  2. Pour broth mixture into skillet and simmer over medium-high heat until sauce begins to thicken slightly (stir occasionally). Add in spinach and stir well. Cook until spinach wilts. Add chicken and mix well before serving.
  3. Cook rice according to package directions.
