Creamy Tomato Herb Chicken – CE

Ingredients

Prep
  • 10 oz frozen spinach
  • 1 T Cajun seasoning
  • 1 T Italian seasoning
  • 1 T paprika
  • 1 T onion powder
  • 6 oz garlic and herb cream cheese or plain cream cheese
  • 1/2 C shredded mozzarella cheese
  • 1/4 C shredded Parmesan
  • 1/3 C sun dried tomatoes chopped
  • 2 T sun-dried tomato oil the oil the tomatoes are in
  • 6 chicken breast cutlets thin breasts
On Cooking Day
  • 2 bag steamers brown rice
  • 16 oz frozen green beans

Instructions

To Assemble
  1. Thaw and dry spinach and add to medium bowl.
  2. Add next 10 ingredients to spinach and mix well.
  3. Lay chicken cutlets in 9×13 banking dish sprayed with non stick spray. Spread spinach mixture over top of chicken. Cover with foil.
To Cook
  1. Bake chicken covered in a 400 degree oven for 25-35 minutes or until chicken is cooked through. Remove foil last 5-7 minutes for cheese to brown, if desired.
  2. Cook green beans according to package directions. Serve with salad.
