Creamy Slow Cooker Thyme-C

Ingredients

Prep
  • 6 boneless chicken breasts
  • 1 C chicken broth
  • 1 C frozen onion
  • 1 T minced garlic
  • 1/4 C Dijon mustard
  • 1/4 C fresh thyme
  • salt and pepper to taste
  • 1/4 C heavy whipping cream
  • 2 T cornstarch
On Cooking Day
  • 1 bag steamers mashed potatoes
  • 16 oz frozen mixed vegetables

Instructions

To Assemble
  1. Place first 7 ingredients in large zipper bag. Zip to seal and squish to mix.
  2. Mix cornstarch and whipping cream in a bowl with lid.
To Cook
  1. Place chicken mixture in slow cooker and cook on low for 6 hours.
  2. Remove chicken and whisk together cream and cornstarch and add to the juices in the slow cooker. Serve over chicken.
  3. Cook vegetables and mashed potatoes according to package directions.
