Country Ham and Corn Casserole – 10 YR Bonus

Ingredients

Prep
  • 2 C cooked cubed ham
  • 3 chopped green onion
  • 1/2 C melted butter
  • 3 eggs
  • 15 oz cans cream style corn
  • 11 oz can Mexicorn
  • 8 oz cornbread mix
On Cooking Day
  • 1 C shredded cheddar cheese
  • 12 oz frozen green beans
  • 6 C salad greens

Instructions

To Assemble
  1. Beat eggs in large mixing bowl.
  2. Add remaining ingredients to bowl and mix well.
  3. Pour into 12X8 baking dish sprayed with non-stick spray. Cover.
To Cook
  1. Bake casserole uncovered in 350 degree oven for 55 minutes.
  2. Sprinkle with cheese and bake additional 1-2 minutes.
  3. Cook green beans according to package directions. Serve with salad.
