Place 10-inch skillet over high heat; add enough vegetable oil to coat bottom of skillet.
Season pork chops with salt and pepper all over. In batches, sear pork in oil until browned, about 1 minute on each side. After searing all of the pork, deglaze skillet by pouring apple cider, scraping up any brown bits from bottom of skillet.
Add onion to slow cooker; top with seared pork, and pour in apple cider. Cover and cook over low heat setting about 4-6 hours or until pork can be shredded with fork. Shred pork; add apple cider vinegar, and season with more salt and pepper as needed.
