Ingredients

  • vegetable oil
  • 2 lbs Pork loin chops
  • salt and pepper to taste
  • 1 1/2 C apple cider
  • 1 1/2 C frozen onion
  • 1/4 C apple cider vinegar

Instructions

  1. Place 10-inch skillet over high heat; add enough vegetable oil to coat bottom of skillet.
  2. Season pork chops with salt and pepper all over. In batches, sear pork in oil until browned, about 1 minute on each side. After searing all of the pork, deglaze skillet by pouring apple cider, scraping up any brown bits from bottom of skillet.
  3. Add onion to slow cooker; top with seared pork, and pour in apple cider. Cover and cook over low heat setting about 4-6 hours or until pork can be shredded with fork. Shred pork; add apple cider vinegar, and season with more salt and pepper as needed.
