Chicken Pot Pie Pasta – C

Ingredients

Prep
  • 3 C deli rotisserie chicken
  • 1/2 C frozen diced onion
  • 10 1/2 oz cream of chicken soup
  • 1/2 C chicken stock
  • 1/2 C heavy cream or milk
  • 12 oz frozen peas and carrots mix
  • salt and pepper to taste
On Cooking Day
  • 2 T butter
  • 2 oz cream cheese
  • 16 oz egg noodles
  • 1 pkg frozen broccoli steamers
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Add the first 2 ingredients to a zipper bag, and squish to combine.
  2. Add the next 5 ingredients to a large bowl with a lid. Stir to combine, and cover with the lid.
To Cook
  1. In a large skillet, melt the butter over medium high heat. Add the chicken and onion mixture to the butter and cook for 2 minutes.
  2. Add cream cheese to the skillet, and stir so it begins to melt. Pour in the peas and carrots mixture, stir to combine, and reduce the heat to medium. Allow to cook for 10 minutes, stirring occasionally.
  3. Prepare egg noodles per package instructions. Add the cooked noodles to the skillet, and toss to combine.
  4. Prepare the broccoli per package instructions. Serve with dinner rolls.
