Cheesy Stuffed Mini Meatloaves – C
Green salad and mashed potatoes

Ingredients

Prep
  • 1 1/2 lbs lean ground beef
  • 1/2 C bread crumbs
  • 1 egg
  • 2 t minced garlic
  • 1 t Italian seasoning
  • salt and pepper to taste
  • 1/2 C spaghetti sauce
  • 3 mozzarella cheese sticks
On Cooking Day
  • 1 pkg frozen mashed potato steamers
  • 1/4 C freshly chopped basil
  • 6 C salad greens

Instructions

To Assemble
  1. Mix first 6 ingredients with HALF of the spaghetti sauce in a large bowl. (wear rubber gloves for easy clean up)
  2. Spray a 12 count muffin tin with non stick spray. Cut each cheese stick into 4 pieces.
  3. Scoop out some meat mixture, enough to fill half of the muffin tin and press down. Add cut cheese stick, then top with remaining meat to cover cheese. Gently press down.
  4. Top each with remaining spaghetti sauce. Cover with plastic wrap.
To Cook
  1. Uncover and bake in 375 degree oven for 25 – 30 minutes or until meat is cooked through. Sprinkle with freshly chopped basil before serving.
  2. Cook mashed potatoes according to package directions.
  3. Serve with green salad.
