Cheese Steak Stuffed Mushrooms – CE

Ingredients

Prep
  • 1 1/2 lb deli roast beef
  • 1 1/2 C onion
  • 1/4 C butter
  • 1/2 t garlic powder
  • salt and pepper to taste
  • 1/3 C mayonnaise
  • 1 T Dijon mustard
On Cooking Day
  • 6 portobello mushrooms caps
  • cooking spray
  • 6 slices provolone cheese
  • 6 C green salad
  • 2 pkg frozen broccoli tots or other frozen veggie tots

Instructions

To Assemble
  1. Chop roast beef and add to a zipper bag.
  2. Slice onion, and add to a small bowl with a lid. Add the next three ingredients to the bowl.
  3. In another small bowl with a lid, add mayonnaise and mustard, stir to combine, and cover with lid.
To Cook
  1. Add onion mixture to a saute pan, and cook over medium heat until onions soften and begin to brown.
  2. While onions are cooking, place mushrooms upside down on a dish lined with paper towels and microwave on high for 2-3 minutes. Turn mushrooms over, and microwave for another 2 minutes. Spray a baking sheet with cooking spray, and place pre-cooked mushroom caps on the baking sheet.
  3. Add the chopped beef to the onions and cook for 1-2 minutes to warm the beef. Remove from the heat, and stir in the mayonnaise mixture. Spoon the creamy beef mixture evenly into the mushroom caps. Top each mushroom with a piece of provolone cheese.
  4. Broil mushrooms for 2-3 minutes, or until the cheese is melted and bubbly. Serve with salad and broccoli tots prepared per package instructions.
