Buffalo Chicken Stuffed Peppers – CE

Ingredients

Prep
  • cooking spray
  • 3 bell peppers any color
  • 3 T mayonnaise
  • 1/2 C Franks RedHot Sauce
  • 1 T ranch seasoning
  • 4 C cooked diced or shredded chicken
  • 1 1/2 C shredded cheddar cheese
  • salt & pepper to taste
On Cooking Day
  • 1/2 C shredded cheddar cheese
  • 3 T blue cheese crumbles optional
  • 1/4 C ranch dressing optional
  • 6 C salad greens
  • 1 pkg baked tortilla chips

Instructions

To Assemble
  1. Spray a casserole dish with cooking spray.
  2. Cut peppers in half lengthwise. Remove the seeds and place peppers in the casserole dish. Cover with foil.
  3. Add the next three ingredients to a small bowl and stir to combine.
  4. Add next three ingredients to a medium bowl with a lid. Pour sauce on top of the chicken mixture, toss to combine and cover with lid.
To Cook
  1. Bake peppers, covered, at 375 for 8-12 minutes, or until they begin to soften.
  2. Remove the peppers from the oven, and remove any water that may be inside of them. Stuff peppers with chicken mixture, and sprinkle with shredded cheddar.
  3. Bake for 15-20 minutes, or until warmed through. Top with ranch dressing and blue cheese crumbles if desired. Serve with green salad and baked tortilla chips.
