Broiled Pesto Fish and Veggies

Ingredients

Needed for Assembly
  • 6 cod filet
  • 2 bell peppers any color
  • 2 zucchini medium
  • 1/4 C pesto sauce
  • 2 T white wine vinegar
Needed on Cooking Day
  • 1 bag frozen rice steamers

Instructions

Assembly
  1. Cut cod, bell peppers and zucchini into bite size pieces.
  2. Add cod to a small bowl with lid and bell peppers and zucchini to a large zipper bag.
  3. Mix the pesto and white wine vinegar in a small bowl and pour equally over cod and vegetables.
  4. Mix to coat well.
Cooking
  1. Pour cod and vegetables onto a large baking sheet sprayed with nonstick spray.
  2. Broil on high for 6-8 minutes or until fish flakes easily with a fork.
  3. Cook rice according to package directions.
