Breakfast For Dinner Bread Bowls – C
Grapes and strawberries

Ingredients

Prep
  • 12 whole wheat sandwich rolls whole/unsliced
  • 2 C fresh spinach leaves
  • 8 oz sliced mushrooms optional
  • 1 C shredded cheese any flavor
  • 1 C frozen chopped bell peppers
  • salt and pepper to taste
On Cooking Day
  • 1 bunch grapes
  • 1 pint strawberries
  • 12 egg

Instructions

To Assemble
  1. Cut a top section out of each roll and hollow out some of the bread to make a bowl.
  2. Fill each bread bowl with the remaining ingredients and store in a large container with lid.
To Cook
  1. Place the bread bowls on large baking sheet and crack one egg into each bowl.
  2. Cover loosely with foil and bake 15 minutes in a 350 degree oven.
  3. Uncover and bake additional 10 – 15 minutes or until egg is set.
  4. Serve with grapes and strawberries.

* you can also scramble the eggs before adding to bread bowls.
