Breakfast Chorizo Casserole – MD

Ingredients

Prep
  • 1 lb chorizo
  • 4 C frozen hash browns
  • 12 eggs
  • 1 C frozen chopped bell pepper
  • 1 T dried onion flakes
  • 1/2 t garlic powder
  • salt and pepper to taste
On Cooking Day
  • 2 C fresh fruit any kind

Instructions

To Assemble
  1. Cook chorizo in skillet until cooked through, cool, then add to baking dish sprayed with non stick spray along with hash browns.
  2. Add eggs and remaining ingredients to blender and blend. Pour over sausage mixture. Cover with foil
To Cook
  1. Bake in a 375 degree oven for 30-35 minutes.
