Beef Stroganoff Casserole – C
green beans and mashed potatoes

Ingredients

Prep
  • 22 oz jar Alfredo sauce
  • 3 C low sodium beef broth
  • 1 T Worcestershire sauce
  • 1/2 C sour cream
  • 12 oz egg noodles uncooked
  • 1 C frozen onion
  • 14 oz frozen miniature meatballs fully cooked
  • 8 oz fresh sliced mushrooms
  • 2 t minced garlic
On Cooking Day
  • 1/2 C breadcrumbs
  • 1 T melted butter
  • 24 oz frozen green beans
  • 1 pkg frozen mashed potato steamer

Instructions

To Assemble
  1. Spray a large baking dish (deep 9×13) with cooking spray. In the dish, whisk together the first 4 ingredients until smooth.
  2. Stir in the remaining 5 ingredients.
  3. Cover tightly with aluminum foil.
To Cook
  1. Bake covered in a 425 degree oven for 30 minutes. Remove from heat and stir. Make sure the pasta is al dente then move on to next step. If the noodles are still too hard, cover and return to the oven until al dente.
  2. In a small bowl, mix together breadcrumbs and melted butter. Sprinkle over the casserole and bake, uncovered, for 10 more minutes.
  3. Cook green beans and mashed potatoes according to package directions.
