BBQ Pulled Pork Sweet Potatoes
Green salad and dinner rolls

Ingredients

Prep
  • 6 sweet potatoes
  • 4 boneless pork chops thick cut
  • 2 C bottled BBQ sauce
On Cooking Day
  • 6 C salad greens
  • 1 pkg dinner rolls

  • 6 sweet potatoes
  • 4 boneless pork chops thick cut
  • 2 C bottled BBQ sauce
On Cooking Day
  • 6 C salad greens
  • 1 pkg dinner rolls

Directions

To Assemble
  1. Wash sweet potatoes and wrap individually in foil. Store in refrigerator.
  2. Add pork chops and and BBQ sauce to a large zipper bag. Zip to seal.
To Cook
  1. Add pork mixture to crock. Place a sheet of foil over the top and place potatoes on top of foil.
  2. Cook on low for 6 – 8 hours.
  3. Remove potatoes from crock. Shred pork with two forks or tongs and top potatoes with shredded pork and extra BBQ sauce.
  4. Cook rolls according to package directions and serve with green salad.
