BBQ Chicken Salad – CE

Ingredients

Prep
  • 1/2 C ranch dressing
  • 1/2 C BBQ sauce
  • 1 deli roasted chicken rotisserie
  • 1 can black beans or any beans
  • 1 C frozen chopped corn
  • 1 C frozen chopped bell pepper optional
  • 2 C shredded cheddar cheese
On Cooking Day
  • 12 C salad greens
  • 6 flour tortillas optional

Instructions

To Assemble
  1. Mix ranch dressing and bbq sauce in a small bowl with lid.
  2. Shred chicken, rinse and drain black beans and add to large zipper bag with next 3 ingredients. Pour half dressing mixture into bag and reserve half for serving. Zip bag and shake to mix.
To Cook
  1. No cooking needed.
  2. Equally plate salad greens and top with chicken mixture. Serve with flour tortillas and reserved dressing.

*may use burrito size tortillas and make this into wraps.
