Ingredients

Prep
  • 1 C frozen chopped onions
  • 3 T minced garlic
  • 1 C ketchup
  • 1/3 C brown sugar
  • 2 T white vinegar
  • 2 T yellow mustard
  • 2 T Dijon mustard
  • 1 T Worcestershire sauce
  • 1/4 C pineapple juice
  • 2 t Cajun seasoning
  • 6 boneless chicken breasts
  • 30 oz canned pinto beans
  • 15 oz canned great northern beans
On Cooking Day
  • 8 C salad greens

Instructions

To Assemble
  1. Mix first 10 ingredients in a small bowl.
  2. Add chicken to large zipper bag.
  3. Rinse and drain beans and add to another large zipper bag.
  4. Pour 2-3 tablespoons of the sauce over the chicken. Zip and shake to mix. Pour remaining sauce over beans. Zip and shake to mix.
To Cook
  1. Pour bean mixture into slow cooker and cook on low for 6 hours or in the Instant Pot for 15 minutes.
  2. Grill chicken on indoor or outdoor grill.
  3. Serve with green salad.
